Huat Kueh is a traditional Chinese kueh that's commonly used as offerings to God and ancestors. The word "Huat" in Hokkien means prosperity and good fortune.

I've always wanted to try out making my own traditional kuehs and there are many recipes in archive waiting for me to test out. Tempted by the many FB posts from the baking groups I've joined, I decided to give this a try today.

From preparation to end product, it took me less than an hour. Quick n easy. Texture of the kueh is soft and fluffy, unlike the usual chewy texture of the store-bought version.

Some modifications which I've made to the recipe:
- Further reduced sugar from 150g to 125g
- Blended pandan leaves with coconut milk instead of water. I used Ayam brand's trim coconut milk but I think the next round I would try using fresh coconut milk from the market.


Happy that my huat kuehs all "smiled" so nicely. The wider the smiles, the more fortune you get! :D

Blueberry Pound Cake

Blueberries, as its known, is a super antioxidant fruit that offers a wide range of health benefits (eg. anti-aging, boosting memory power, eyesight etc...).

I've had a box of blueberries sitting in the fridge for few days and so I thought, why not bake something with it? So I went on searching for recipes and came across blueberry cheesecake, blueberry buttercake and blueberry lemon cake.

Finally settled on a blueberry pound cake by Rasa Malaysia. Another hit with my family. :)

40mins Breadrolls

It's been some time since i last baked bread, for obvious reasons.. breadmaking is not an easy task and I'm not good at hand kneading. To make bread that's soft, fluffy and yummy, it's even more difficult.

I've tried breadmaking a few times before but results were nothing to shout about. It just tasted bread, nothing fantastic.

My very last attempt was a disaster as I think I've over proofed and over baked the dough.. end product was rock hard bread.. The exterior was rock hard but the interior was still palatable :p well, anyway it was a good lesson learnt.

I left the dough to proof and went on to do other things, mistake! Wasted my efforts.

After that day, I've been wanting to try again but then was too busy with big boy's year end exam prep, followed by new school year (yes, Lil boy joins his gor gor in Pri Sch this year) and other stuff. Until recently, my passion was reignited after coming across few recipes that promises soft n fluffy bread. Methods described in the recipes looked manageable, I was determined to succeed.

Few weeks ago, I've finally braced myself to give it a go. I chose this 40mins quick bread recipe which i think is the easiest among all. True enough,  it was a success and a hit with my family.
